OK, these are a favourite around here so I figure I'll share the recipe. Use Guittard chips. Really. I've tried them with Ghirardelli and Nestle and they're just not as good. You can also do this with a single bowl, but it's a bit of a pain that way. These are fudgey and almost too chocolately; Shel thinks they are great with peanut butter, I like them warmed just a bit, and my neighbor rerigerates 'em.

Guittard Brownie Muffins:
1 bag Guittard semi-sweet chocolate chips
1 bag Guittard milk chocolate chips
10 oz unsalted butter
4 eggs
3/4 cup sugar
1/2 TBSP vanilla extract
1/2 TBSP salt (if you're using salted butter reduce this to 1/2 tsp)
1 cup flour
1 cup chopped pecans (plus 12 perfect halves, if desired)

Heat oven to 350. Line a muffin tin with foil liners.

Set aside 1 cup of chocolate chips in a bowl with the pecan halves (to top the muffins) and the other cup with the chopped pecans and flour (to add to the brownies)

Mix eggs, sugar, vanilla, and salt in a small bowl with a fork.

In a large glass bowl melt the semi-sweet chips with the butter in the microwave, use half power in 1 minute increments, stirring after each. It takes 3 in my microwave.

Whisk egg/sugar mix into chocolate. Fold chips/nuts/flour in.

Portion into muffin cups, top with remaining chips and nuts.

Bake 30 minutes.

How full should the muffin cups be when filling?

The batter fills 12 muffin cups. They are full when there's no more batter! :D

This recipe has no leavening, so they don't rise much... the cups are filled pretty much to the top.

Yes, thank you very much for sharing. Quick question though, I assume "Guittard chips" are the brand of chocolate chip. Can you get those just anywhere? I don't recall seeing them last time I was in the baking aisle...although that was a good chunk of time ago :P

My local Safeway carries them, and I used to get them at Sam's club, so WalMart may be a source. They are really worth seeking out.

These are fail-proof. The hardest part is putting the chips on top without eating half of them.

Hmmm...

Think I will make some when I get home from work.

Guittard chips are the bomb. My wife picked some mint ones up at Tom Thumb (it's part of the Safeway chain in Texas and elsewhere), and made holiday chocolate chip cookies. Holiday, because they're minty.

I'll pass this along to her, since she handles the baking :)

Well, yeah, and there's the fact you live two thousand miles away :p

If you're ever in Vegas, I'll cheerfully make you chocolaty goodies.

Kirra, look in the cupboards and the refrigerator. Usually there is something you've forgotten about that can jump up that turkey sandwich to a pretty good meal.

In my opinion Mus, Taamar is not an evil seductress as succubi tend to be. She is more in the line of natural elves and imps, a creature of Gaia, and more in line with the compulsive creation aspects.

My wife would get the compulsive creation bug and she had to try out recipes and put her own twists on them. I might as well get a good long book because I was banned from the kitchen and told to take care of the daughter for awhile. Usually I'd grab the kid and go to a movie or shopping and come home to a wonderfully smelling house and great food.

I'll send you the Guittard sometime if you'd like. The first taste is free.

My grocery store always seems to have Guittard's in stock and I rarely see it in anyone's cart. I tried to get my wife to try it way back when, but it was an unfamiliar product, she would usually go with Nestle's Toll House chips.
