So based on my rant...

I have a problem. Part of dealing with this problem is that I must eat breakfast, lunch and dinner. Normally this is not a problem... except for a few days a week.

On Friday night/Saturday morning and Saturday night/Sunday morning I work 7pm to 3am. As a result I do not get up until close to 1:30 pm. So by the time I am ready for breakfast it is close to 2 or 2:30 pm. Which puts dinner sometime around 7pm to 8pm. This should put dinner at 12:30 to 01:30am. But; from everything I have read/been told: It is not healthy to eat that late at night. any suggestions?

You listen but you do not understand. Like most people, you are getting too literal about the times and not understanding the schedule.

Breakfast is right after you get up.
Lunch is about 4-5 hours after that.
Supper is about 5-6 hours later.

So, if you get up at 6:30, finish breakfast by 7:00, have lunch noonish and dinner at 6:00 then go to bed around 10-11, then you are following a normal day-timers schedule. You however don't have a normal schedule.

Get up at 1:30, finish breakfast around 2:00 - lunch around 7:00, dinner around midnight, then go to bed 2-4 hours later.

The trick is not to eat for at least two, preferably more, hours before going back to bed. Stick to an eating schedule that fits your life, do not adopt the meal schedules of people that are not required to be up at the same time you are.

Don't go to bed on a full stomach, that is the message behind don't eat at midnight.

the only other thing I would add..would be to try to keep similar schedule on your days off too.

okay, then if I am really not too hungry; can I get away with a serving of almonds and cashews and maybe a low sugar/carb protein bar for dinner?

The thing you have to get used to is recognizing when your lvl is low. When you are on the medication it is releasing and if you don't eat then you will bottom out. Also if you think you can eat less now for more later that doesn't work either, because you will then go high. Best to try to stick with balanced meals 3x till you get more of an idea what your glucose lvls are and how they are doing in reaction to your meals.

DS,

eat less..but don't add it on at other times... And just make sure you realize how it feels to be low. Typical symptoms are sweating, disorientation, sometimes others notice personality changes (you might get really irritable). When you feel like this check your level then you will be able to associate and recognize what is happening. This will take time. Also make sure you have a fast acting sugar available at all times..orange juice or you can buy stuff over the counter too. Low blood glucose is more dangerous than high for you right now.

Also make sure your family gets used to watching for signs of your sugar being too low. Then they can get u the juice, sometimes you are not able to think clearly enough.

Don't be afrad of any of this, just be aware!

Make mini-quiches in a muffin tin when you have an hour or so in the kitchen. Keep them in a gallon-sized plastic baggie and grab one when you need a quick meal.

And make sure your family knows the symptoms as well. My mom had her first episode of low blood-sugar and was disoriented. My dad didn't know what it was and wanted to take my mom to the hospital, but my Mom kept saying no, that she just wanted to lie down. He listened to her for a while. Eventually she was able to focus enough to realize what was wrong. For a while she knew something was wrong, but couldn't figure out what, because she couldn't think straight. And my dad handled it completely wrong.

So make sure they know what to do if you start acting funny and disoriented.

Also keeping a couple of small all natural chewy lollies around the house also helps. Sometimes you just need a tiny bit of sugar to keep you going until you can get some real food.
