Do you know the breed?

If you want to know how the manage the plants, you've probably got yourself an indeterminate breed of tomatoes since you are saying they are 6 foot tall. They grow like a vine, not a bush. (These are too high maintenance if you ask me.) Get a strong trellis, or at least some sort of tall cage you can wrap them around. Make sure you sucker them to help grow better tomatoes. (Pinch off any little baby branches or "suckers" that start to grow in the V of two other main branches. These won't make decent tomatoes anyway.) Note - you usually do NOT want to sucker the plants if they are a determinate (bush) variety.

So when you pick your tomatoes, get a pot of boiling water, and a bowl of ice water. Drop em in the boiling water for about 1 minute (long enough to loosen the skin, not long enough to cook them), then quickly move them into the ice water for another minute or two. The skin will peel right off. Chop them into wedges. Pull out the seeds and pulp and save this. Use the rest of the tomato meat for cooking. Put the seedy goo into a bowl with an inch of water on top. Leave it to sit somewhere undisturbed. After three days, skim the scum off the tomato seed bowl and dispose of it. Also dispose of any floating seeds, you only want the sinkers. Refill with a little more water. Repeat until there is no more scum. Drain the seeds and dry them on a paper towel in a shallow bowl for another week or two, turning occasionally. Bag the seeds, and drop in a label for the plant name and growing season (Tomatoes - Spring 2011).

What do you do with the plants? Well, you could take and put a stake at both ends of the row, take twine/string and go from one pole to the other, weaving it back and forth thru the plants. Repeat higher or lower, until you have support for the entire plant(s).

Also, week mat or even plain black garbage bags at the bottom around the Earth keeps in moisture and keeps out weeds.

If you are talking about the actual bounty.....be happy? Tomato sammiches are always a welcome site. If you have a huge amount, can some for winter.

There is an easy way to do this.....sterilize jars, stew tomatoes, heat lids in water. Place a clean, dry jar on a dry towel in the microwave and heat for 20? seconds (depending on your microwave's ability). This will heat the jar a lot, so remove carefully. Spoon in tomatoes, add a large pinch of salt, place heated lid on jar and let cool/seal. You now have canned tomatoes :)

Hope you fare well with the plants. I have had many years where I fought blossom rot, bugs, diseases, etc. I once lost 80 plants in a season.

I make fresh Pico de Gallo. Tomatoes, Red Onion, fresh cilantro, lime juice and salt. Heat add --Jalapeno

I got 4 different varieties: Beefmaster, Better Boy, Juliet, and Celebrity.

This year I put together a raised garden bed, put a four foot dog-proof cage around it and followed the instructions from Square Foot Gardening. When the tomato plants grew, I was pleased. When they made it to three feet I was happy. When they made it to four feet, I was surprised, and added some five foot tall wire fencing around the group to support them. Then they grew above the fencing. Now they are taller than my back yard fence, covered with green tomatoes, and are the talk of the neighborhood.

If your green tomatoes don't ripen put them in a brown paper bag out in the sun and they should in about two days.
