Lime pie, key style. Excellent for breakfast with real whipped cream and coffee.

Crust:
6 oz AP flour
2 oz superfine sugar
4 oz salted butter, refrigerated

Filling:
1 can (14 oz) sweetened condensed milk
6 egg yolks
juice and zest of 4 limes plus lemon juice or water to make 6 oz

Topping (and coffee garnish):
8 oz whipping cream (COLD!)
2 oz powdered sugar
drip of vanilla


Heat oven to 350.
Stir sugar and flour together, rub in butter until the mixture looks like sand. Press into a pie plate or tart pan and smooth with a spoon. Bake about 10 minutes until just starting to turn golden on the edges.

Stir yolks and sweetened condensed milk together, then stir in the juice. (one could add green food color at this point, if one were a damned heathen). Pour into crust and bake 12 - 15 minutes until just set (jiggly in the middle but not sloshy). Cool overnight.

Beat cream (by hand or with mixer) until thick then beat in sugar and vanilla until stiff. Be careful, it's easy to overbeat cream with a mixer and end up with butter!

Slice pie into 8ths and garnish slices with whipped cream.

Zest is the difference between water with lemon juice and sugar and 'lemonade'. When you cut citrus and it smells amazing it's the oils in the zest that you smell. Grate the top colored layer off the peel, avoid the bitter white pith. Or peel with a potato peeler and chop fine. Or peel and boil in syrup (2 parts sugar, one water), dry, and crush for a bright, pretty garnish.

I will try to find my recipe for Key Lime pie.

Factoid: Always mix apple types when making an apple pie. Some will maintain their shape, and some will melt into a wonderful apple sauce that surrounds the others.

Yup. I generally use granny smiths and macintoshes, with at least one sweet eating apple added (often a fuji).

Not being much of a baker, I don't have any good recipes for such delicious pies.

Taam...Could you provide a proven delish Apple Pie recipe? I would love to give it a try and I do so love a yummy homemade pie.

Apple pie is a zen thing... you don't need a recipe so much as a hunger for it. Mine goes like this:

Pie crust. Home made is great, pillsbury sheets are just fine.
Apples. About 7, cut up. A mix of types, mostly granny smith. If you cut too many just make more filling.
Flour. Enough to coat the apples when you toss
Sugar. Depending on the sweetness of the apples and desired sweetness of pie. Brown or white. Or maple.
Spices. You can use a simple packaged apple pie spice. I mix my own with cinnamon, ginger, cloves, mace, and white pepper. And salt. Don't forget salt!
Flavourings. Lemon juice, lemon zest, orange juice concentrate, apple cider powdered packets, raisins, honey, cranberries, cherries, vanilla, rosewater, maple syrup, bacon bits, melted butter, cheddar... it's all up to you. remember to add flour to offset wet ingredients.

So.... spread the bottom crust in a deep pie dish. Cut your apples and toss with the other stuff you've picked. Pile it high in the pan, they will settle when they cook. Dot the top with butter. Cut small vents in the top crust (or make pretty with a cookie cutter). Spread it over the apples and crimp the edges shut (use a fork or pinch). Bake at 350 (or whatever you're roasting) until the house smells like heaven. Pull the pie when the crust is beautifully brown.

Then serve, smile, and pretend it was really hard work.

Have you TRIED it? It would be terrible with a mrs.smiths pie (too much sugar gel, not enough apple) but a real pie? Apple and cheddar is a classic pairing.

Yup, that's the stuff. I love the way it's gone crytalline in texture while retaining a creamy undertone, perfect with crisp apples.
