A while ago, my wife asked my grandma for a soup recipe using Italian Sausage. The recipe finally showed up in the mail yesterday (yay!). This one originally comes to us by way of my grandpa's sister.

My wife made this today and it's really tasty.

Bean, Pasta, and Sausage Soup

Ingredients
1.5c white dry beans
3 quarts cold water
3 large potatoes, peeled
2 sprigs fresh rosemary
2 bay leaves
1.5 tsp crushed red pepper
1 onion, chopped small
2 large cloves garlic, chopped very fine
1 large carrot, shredded
1/2c Italian parsley, chopped
1 can of tomatoes
4 Italian Sausages
1/2lb small pasta (ditalini, etc...)

Directions
1. In a small pot, cover beans with water and boil for 5 minutes. Drain, rinse, and set aside.
2. In a large pot, put potatoes, beans, rosemary, bay leaves, parsley, red pepper, and 3qt of water.
3. Boil for 30 min.
4. Meanwhile, in olive oil, brown garlic, onions, and carrots. Add tomatoes. Simmer for 10 minutes.
5. When potatoes are cooked, transfer to a bowl. Mash roughly. Return to soup pot.
6. Mix the onion and carrot mixture into the soup.
7. Take sausage and cut into thin slices. Brown. Add to soup.
8. Cook for 1 hr.
9. Boil pasta and add to soup.
10. Serve with grated parmesan.
