 Post subject: Bland Beef Bourguignon?

So, I made Beef Bourguignon with this recipe: http://family.go.com/food/recipe-cp-786741-beef-bourguignon-t/

I followed it to a T with two exceptions: I used one cup of red wine and one cup of white wine instead of 2 cups of one color. I also had to add half a tsp of salt and pepper.

As far as the meat goes, it came out perfect...tender, flavorful...perfect. But the broth? It was extremely bland and had very little flavor. We like to put the broth over rice or potatoes and it just wasn't very good at all.

But the meat was PERFECT.

Is that the way it's supposed to be? I've never made it before.

Should I try a different recipe or add something else to it next time?

Google some other recipes for this dish and compare their ingredients to the recipe you used. The couple of recipes I looked at had carrots, celery, thyme.

Yeah, I looked at Julia Child's recipe (my goodness that woman must have lived in the kitchen lol!) and saw that hers adds thyme, carrots, a fuller-bodied wine, a tablespoon of tomato paste, and stock instead of broth.

It does look yummy, but it looks like it would cost a fortune and take all day in the kitchen! One day, maybe, but for now I'll stick with the cheaper and less labor intensive version of the recipe....it just needs a little tweaking.
Also, it was MUCH better the second day...I guess it had time for the flavors to do whatever it is they do overnight in the fridge, haha!
I think next time I'll cook it the day before and let it sit all night in the fridge and warm it up in the crock pot the next day for a couple of hours on low.

Needs veggies! Unless you're making your own stock the stuff you're getting in cans or boxes is pretty bland and needs the extra flavor. And veggies are cheaper than meat, so they'll extend the meal. A chopped onion, some celery, and a handful of carrots would help a lot. The white wine may have been part of the problem as well... it's not oomphy enough.
