My special recipe:
3/4 cup molasses 1/3 cup soy sauce 1/4 cup lemon juice 1/4 cup olive oil 1 1/2 teaspoon minced garlic 1 teaspoon black pepper
12 boneless, skinless chicken thoighs or roughly equivalent amount of boneless skinless chicken
Get your fire going (I do practically everything over mesquite charcoal here in Texas since it's as common as regular charcoal, but select whatever wood flavor you like for chicken) and make the sauce.
Coat the chicken pieces thoroughly in the sauce
Place on grill. Baste generously with sauce on both sides while cooking. I like to cook the chicken around the edges of the fire, not over the center, if there's enough room to do that. I also like to keep the coals down on the 2nd from the bottom setting for the coal grate.
When chicken is completely cooked, serve, either as-is or with BBQ sauce of your preference. I have a white sauce recipe, I'll post shortly. Just gotta dig it out. We had some frozen tonight so I didn't need to make it.
