Set rice with salt and cumin to boil. Heat a skillet and throw in some oil and seasoned chunked up chicken. Brown and set aside. Now saute a sliced onion in that pan until soft and brown. Add a glorp or red or green curry paste and a can of coconut milk (light works). Stir, add a can of garbanzos and some frozen peas. Add chicken back, stir, and cook until the chicken is done. Serve your easy curry over rice.

I'll have to find my chili recipe, but yeah it's not hard to make at all. If you have a grill there's tons of stuff you can make in less than 20 minutes.

Chicken, bit of olive oil, salt and pepper, throw it on there. Same with sliced up eggplant, peppers or cucumbers.

and if you grill a bunch of chicken at once on the weekend you can add it to many meals during the week.

Yeah I usually do a large package of cutlets and eat them throughout the week. Oh add some balsamic on the eggplant too before grilling and let it marinate a bit, delicious. Cut ut fairly thin too, I personally like it tender and a bit crispy around the edges. Mmm.

Chicken Tortilla soup

saute in a bit of olive oil:
one minced onion
two-three minced garlic cloves
one pound chicken in chunks (left over grilled is best)
six-eight small corn tortillas, cut in strips

When onions are soft and chicken done add:
64 oz. chicken broth
one can diced tomato with habaneros
one can diced tomato
one-two can(s) black beans

heat 5 minutes and serve.
