Santa Fe Soup

Post subject:  Santa Fe Soup

2lbs browned ground beef, drained
1 can black beans w/liquid
1 can white corn w/liquid
1/2 can diced tomatoes w/liquid
1 packet taco seasoning
1 packet ranch dressing mix

Put it all in a pot, simmer for 30 minutes.
Serve with grated cheese, sour cream, and white corn tortilla chips.

sounds delicious, but this sounds more like a sauce than a soup, is it missing anything, like water and beef base or chicken base?

No its not missing anything. The first time I saw the recipe, (I modified it slightly, it originally called for yellow corn and pinto beans) I was very wary but my step-daughter looked at the ingredients and asked if I would make it so I did. It turned out great...its really thick, almost like a dip I guess. Not a lot of broth to it really. But it has such a tangy zesty flavor, great texture, and is really good when you scoop it up on tortilla chips.
My kids and my husband hate soup and they hate beans and tomatoes but they really love this stuff and even ask for it.

I would say green chilis, chipotle, jalepeno, probably some fresh avacado and fresh cilantro. Maybe some lime juice, a pinch of roasted and ground fennel, and a bit of cumin.

Then cream it out slightly with a tiney bit of heavy cream and jack cheese, and a touch of sour cream.

Maybe even substitute shredded beef, turk, chick, or pork for the grounf beef.

Finish with fine cut chives, fine diced red onion, and very very finely shredded chedder.

Huh, so, you're getting the liquid from the soup from the beans, corn, and tomatoes ... You could drain all of those, and use a cup or two of beef or chicken stock. I'll bet that would be pretty tasty. Thanks, might try this for my kids tonight.

My wife makes this...with the green chiles added, but we call it "taco soup" because the woman who gave us the recipe called it that.

My kids (all of them) will even eat it, and there is no bigger stamp of approval than that.

You could if you wanted to I suppose, but really, the soup is so tasty as it is you really wouldn't need to....and the way it is makes it sooo easy to make.

Just wanted to say that this dish is fine as wine. The chips really make it.

I really got lucky. I thought I was getting a hot chick with a great voice and personality who is great in the sack. I didn't realize she could cook so well.

My mum trained me in greens by chopping them into tiny bits (enough so I can't pick it out) and adding them to meat dishies... I eventually got sick of trying and just ate it.

them for blackeyed peas on New Years Day, changing the coonass good luck tradition. They
seem equally (in)? effective.

I have not had the opportunity yet. I generally build a monthly menu plan around sales that the local markets are having, and stocking up in quantity, storing stuff in my box freezer.

I picked up about 20 lbs. of pork shoulder last week, and I have planned to use about 3 lbs. of that to make your soup some time this month.

I promise I will let you know. :)

LK, tried the recipe.....not bad. A little bit bland for my taste, but with a little adjustments......

I added a little fresh cilantro, and next time I think something (hot) will be just right.

This is also good as a dip, if you add some sour cream, cheese, and salsa....so I've found. :)
