tonights dinner consisted of the following...

Hot and Mild Italian Sausage, parboiled and then fried to a golden brown, fresh garlic, mushrooms, onion, green and red bell peppers, and I threw in a fire roasted red pepper for flavor.

That was the colorful main entrée. But the rest was 7 grain whole wheat Fusilli with a home made sauce.

For the sauce: I used 56 oz of crushed tomato, 12 oz of tomato paste, 3 medium yellow onions, 1/2 lb ground hamburger, 1 large red bell pepper, 1 large green bell pepper, 1lb of mushrooms, 1 fire roasted red pepper (TJ brand), sadly I used a premixed Italian Seasoning Blend this time (but that will change next time I make this), and about 3 Tbsp of Brown Sugar (cannot find the Splenda brown sugar or Stevia brown sugar anywhere).

I actually made enough of this sauce to freeze some, but I am not going to make mass quantities of the sauce until I refine my recipe.

Gladdly! A few others things you might want to consider:

Try cooking the sausages in the pot, and then build the sauce around them, and you'll draw in a hint of flavor from all that yummy sausage grease.

In the event that the sausages must be prepared seperatly, I recomend baking them in a thin layer of seasoned water, and this way they won't lose as much flavor as when you par boil them.

Dude, I would love to do that with the sausage grease and the sauce.. but I am the only one in the house who likes Italian Sausage. And if it were not for the Anise seeds.. this would not be the case.

I will try that with the baking though, sounds awesome.

I also tried this the other day, at my dad's suggestion:

sautee onion, fresh garlic and mushroom in low sodium Worcestershire sauce and butter; serve as a vegetable.

Add red and green peppers, skinned-diced eggplant, shallots, zuchinni, summer squash, shaved carrots, broccoli rab,and olives to that mix, and add just the tiniest bit of your red sauce to it.

Hrm; this batch of sauce is actually a bit too sweet. tasty but just a bit too sweet, and it has some bite in the background; so I do not want to just add somethign spicy. It would push it too far into the spicy.

Cut down on your sweetener and you'll get where you want to be, as for this batch, tomatos have a natural tartness to them. Adding more crushed tomato will dillude some of that sweetness. Adding a small amount of balsamic vinegar will help some too.

I would totally go to Vegas for a get together.

Yeah, I'd never par-boil sausage. Would you boil a steak before grilling it? I cut it onto chunks and brown it in a large, deep skillet. My kwik-ee sauce is that, chicken stock to de-glaze the pan, a big can of italian diced tomatoes, some tapanade, and a glorp of whatever wine I've got open. Simmer until it thickens back up, and good to go!

That sounds like a solid braising liquid. Do you do your Osso Bucco in the same one?

Osso bucco gets beef broth and significantly more wine, always red (unless I'm doing it white, which gets no tomatoes anyway). And bay leaves. Finish with lemon zest.

The sausage sauce is usually pretty stripped down, it's an 'OMG, hungry!' type recipe that morphs to fit the situation and the leftovers in my fridge. Last time I made it it got all creamy with a quarter cup of sauce leftover from shrimp alfredo.

Yeah, you would definitely be fun to play with. I love working with other creative people. The stuff that winds up coming out of those collaborations is usually absurd.

mmmm dark chocolate dipped bacon chunks.

A friend of mine went and made candy bars that were like Nestle's Crisp, but they were bacon.

They were so awesome.
