I'm starting a thread for poeple to put their favorite quick easy snackish recipies. I'm kinda bored with the ones I've been using and I'm hoping for someone to have something new for me.

I'll start with possibly my favorite: bruschetta.

There's tons of variations, but a basic mozzarella and tomato is what I usually make.

grape tomatoes
fresh mozzarella (don't get the crappy shredded stuff)
basil (preferably fresh of course)
olive oil
balsamic vinegar
salt and pepper

I generally just quarter the grape tomatoes, cut the mozzarella into cubes of about the same size. I prefer there to be slightly more mozzarella than tomato, but make it to your preference. Stir them in a bowl with enough olive oil to lightly coat. Put in as much balsamic vinegar as you'd like; I like a lot but when I make it for others I put in much less. Add the basil, salt and pepper. Give a few stirs to evenly mix.

In restaurants it's usually served with toast of some kind, so you can do that if you'd like of course. It's also good thrown on some flat bread and put under the broiler for a bit until the cheese melts (which doesn't take long). If you're going to do that though, don't use the vinegar. You can also just eat as is, which is what I usually do. It's also quite good cold, so throwing it in the fridge for a bit is never a bad thing.

*edit* Oh, this is also good for a cold pasta. I prefer to use the large shell type. Make sure to cool the pasta before adding the bruschetta, because like I mentioned before, the mozzarella melts quickly.

Chili con carne

Mix in a bowl
Microwave

Chips

Done!

Cream cheese
Chili con carne
Nacho Cheese Soup (or Fiesta Cheese Soup)
Platter

Spread to make a nice deep layer of cream cheese
Spread the chili con carne
Cover with nacho cheese to make it pretty

Nuke

Done!

Pinwheels

Cream cheese
Budig corned beef

Spread cream cheese lightly on corned beef
Repeat
Stack 3 finished pieces
Roll
Cut into pieces you can put a toothpick on

So... I guess quick snackish food in my mind usually involves cream cheese.

polish sausage (the kind you buy like hot dogs)
multi grain tortillas
shredded Mexican blend cheese.

Slice Polish Sausage in half (the long way) and throw in a skillet. Flip every few minutes until it starts to get char marks.

Put tortilla in pan, flip continuously until it starts to get crispy.

Put a handful of cheese on tortilla and let it melt a little.

Put both halves of sausage on top of melting cheese. Remove from pan, put on ketchup and brown mustard.
Fold edges of tortilla up and over the top of sausage (not rolled, folded).

Turn off stove and enjoy.

2 tbsp olive oil
6 cloves of minced garlic
1 or 2 cans of whole tomatoes
enough red pepper flakes to make it spicy
little bit of white wine if you have it

quickly cook the garlic and pepper flakes in a pot with the oil and wine. once done, smoosh up the tomatoes, add to pot. mix, heat through, serve over pasta

takes longer to boil the pasta water than do anything else

For Lady Kate ...

1 12 oz. Can Peeled Pear Tomatoes in Juice
1/2 Fresh Basil
4 Cloves Garlic
4 Tbsp Olive Oil
1 Anchovy
1/4 tsp salt
1/4 tsp coarse ground black pepper
1/2 cup dry, very dry, red wine (Nozzole Classico Chianti in the 2-4 year old range)

In a small frying pan, pour some regular vegetable oil about 1/4" deep and get it very, very hot. Then toss in the anchovy and cook it until it's very, very done (almost black). Set on a paper towel to drain for about 3 minutes.

In a deep glass bowl mix oil, garlic, basil (finely chopped), salt, and pepper and then using a wooden spoon as a pestle, crush the basil fairly vigorously. Put in the bottom of a sauce pan and heat for two to three minutes over medium heat.

Take the anchovy and grind it to a powder between your fingers, add to oil and spice suspension and cook another 60 seconds.

Add tomatoes to this and crush between your fingers until you reach desired tomato chunk size (just squeeze the tomatoes and let them squish between your fingers).

Cover and simmer for 20 minutes.

Serve over pasta of your choice.

Chop up a handful of garlic
Grate some Parmesan cheese
Crumble cornbread
Mix the above
Add water until sticky
Cut a slit in salmon
Stuff
Bake/grill/broil
Eat

Add a handful of chopped fresh basil
Pour in tomatoes

You can get anchovies. The problem is you really can't get less than a can of them.

Pigs in a Blanket (Weight Watchers-style):
- Hebrew National 97% fat-free hot dogs
- Pillsbury Reduced Fat Crescent rolls
- Borden American Cheese Sensations (either Monterrey Jack or Applewood Smoked Bacon flavors work)

Unroll crescent rolls. Place a quarter of a slice of cheese in each crescent roll. Place hot dogs in crescent rolls. Roll crescent rolls. Place on baking sheet and cook in oven at 375 degrees for 10-12 minutes or until golden brown. Take out and let cool down a minute or two. Enjoy with a good green salad, bean salad, or grain pilaf.

This is my go-to recipe when I need food quickly and I don't have time to make anything fancy.

Anchovies are a spice and as stated in my recipe nothing to be afraid of. You won't even notice the fishy-ness.

By the by, depending on how your anchovies come packaged, you might not need to add any salt.

If I can find them, I'll try that recipe out. Also, I very very very rarely ever add salt to anything unless specifically asked to. Most things I find have way too much sodium in them already.
