Post subject:  Deli Salads

Okay...I didn't have time to make my own the past couple of days, so hubby picked a couple up from the instore deli. The macaroni salad and the bowtie Italian style salads were okay, but why oh why do the delis always make the bean salads sooooo sweet??? It's frigging inedible!!!

I like cous-cous, and the potato salad made with mustard rather than mayo, but most deli salads are kinda icky to me.

Most deli salads are too sweet/vinegary for my taste, which is why I usually make my own. We did have a broccoli salad from the deli a couple weeks ago that was pretty good...raw broccoli florets, red cabbage, mandarin oranges, nut pieces (I think they were cashews) in a sour cream based dressing. Unfortunately the grocery near hubby's work didn't have the broccoli salad this past weekend.

Pasta salad isn't all that hard to make honestly. Dice up some veggies, like carrots, bell pepper, etc. Cook some farfalle for 10 minutes. Toss with Italian dressing or olive oil/vinegar. That's pasta salad right there.

Bean salad. Mix variety of beans out of a can (drain well), throw in other vegetables, dried and/or fresh herbs, italian dressing or olive oil/vinegar mixture and you've got bean salad.

That's pretty much it Ienan. Not much to it, except a little time. Guess I need to just take the time and not let time constraints keep me from making the better food! :)

Wanna have your mind blown? Add some garlic and onion powder, and a few spoonfuls of sweet pickle relish to your Italian dressing or oil/vinegar mix and run it through a food processor to liquify.

I love spagetti salad from the deli, and Amish potatoe salad too! Never tried the bean ones. I have decided, I just don't have the time or desire to cook. I want it prepared for me!

I've tried adding garlic and onion powders to the oil/vinegar mix, but never put in sweet pickle relish. My mind shall have to be blown next time I try.

Joe's Crab Salad

(from memory, might not be exact)

1lb macaroni noodles, cooked
4 hard boiled eggs, diced small
4 celery sticks, sliced
6 scallions, sliced
2lb imitation crab meat broken into small pieces (or cut)
Snow pea pods, trimmed and cut into 1 inch sections. (I want to say 1lb but that seems like a lot)

Hellman's Mayo (don't remember how much, maybe a cup?)
Old Bay seasoning

Throw everything in a big bowl (except the mayo and old bay)
Add some mayo and stir until it's the desired consistency.
Add Old Bay until desired flavor has been achieved (I use a lot of this)
Chill in the fridge to let all the flavors mingle, or just eat it fresh.

Don't put the hot ingredients in while they are still hot or the mayo will get cooked. You know, like bring the pasta down to room temp.
