Amazing what you can do with 6 eggs, 3 cups of milk and 1 1/2 cups of sugar, isn't it?

Sorry the picture's kinda crappy, I'm just going to have to trust that some of you can see past the poor photography and imagine how good this really looks.

The only weirdness in the flan came from having used Turbinado in the custard. It didn't dissolve as cleanly into the mix as a refined sugar would have, and the end result had an odd texture. Taamar has promised, however, that she will make sure I have all the right ingredients on hand next time ;)

Well ok, as long that's a normal saucer and not a dinner plate, we're good. I mean, seriously, I like flan and that looks to be a delightful sample. But ... holy geezus diabetic coma on a plate if that portion was as big as it looks!

Oh, it's the size about which you were concerned and not the out-of-focus shakycam? Sorry to disappoint but not only is that not a saucer, it's not even a dinner plate. That's a serving plate. The flan was baked in a 9" cake pan. Remember, the ingredients list call for 6 eggs and 3 cups of milk.

Taamar's grand scheme, I'm just the line cook on this one. It's a breakfast flan for two, so "why split it up when you really only need one serving?". In terms of eggs & milk, it's not much different from a couple of omelettes but has the benefit of being cold and having been prepped the night before. Also, the caramel is fantastic in coffee :D

Flan is one of my favorites, and i used to cook it all the time. I have difficulty ordering it in restaurants however, due to the tendency of others to over caramelize the sugar, which imparts a bitter flavor that overpowers the others.

Most restaurants have the same issues in preparing creme' brulee.

A custard cup of flan is not sufficient breakfast.

We like ours pretty dark, but never scorched. My ex mother in law made a flan that was based on cream cheese, which was nummy, but I like the simple egginess of the classic recipe.
