Perfect on a hot day. Put into a mixing glass: 2 Oz Freshly Squeezed Lime Juice 20 mint leaves 1 Tbsp. of crystallized sugar cane syrup Muddle thoroughly. Fill a pitcher with ice. pour contents of mixing class over the ice. Add 6 oz. of white rum. (Real Havana Club if you can get it. Not the fake stuff in the USA...the real cuban stuff is the only proper way to make a Mojito, out of respect for Mr. Hemmingway.) Add 1 can of diet 7-up/Sprite. Mix with large spoon, and serve. Should serve 4. Rationale: Despite being one of the lowest calorie cocktails to start with, most mojito recipes call for 3-4x more sugar, then use club soda to top it off. I use just enough sugar (coarse crystallized cane syrup at that, to help with muddling) to overpower the artificial sweetener taste, and the lime juice completely masks the lemon-lime of the calorie-free soda. End result, one extremely refreshing pitcher of low-cal cocktail! |

You can substitute tonic water if you are looking for less atrificial sweetner. |

Tonic is higher in calories, though. It loses it's low-cal tag then. You could use something like agave nectar instead of sugar syrup and/or artificial sweetner, which would be sweet, slightly fewer calories, and more natural. And club soda is fine. That's just carbonated water, also known as seltzer. |
