Sadly I didn't have key limes handy, but I make a lime pie in the classic style and am always amazed at how easy it is.
Heat oven to 350
CRUST 4.5 oz cookie crumbs (graham or nilla) 1.5 oz sugar 1.5 oz butter, melted
mix until it resembles wet sand and press into a 9" pie plate
FILLING 1 14oz can sweetened condensed milk 6 egg yolks 6 fluid oz (3/4 cup) lime juice 1 Tbsp lime zest
OK, clearly key limes are the best, but if you can't get them then use the regular limes. Bottled juice doesn't taste right. I suppose you could mix bottled key lime juice with fresh regular lime, but it's best to stick with fresh if possible. Stir together milk and yolks. Gently stir in juice and zest, the mixture will thicken; the goal is to blend without incorporating any air bubbles. Pout into crust and bake 15 minutes. Chill before serving. May be served with whipped cream.
