If I knew at all what you're talking about, I might be able to help, but in general, no clue. Had to look up "muscadine." Interesting. These just growing in your backyard or something? |

Took the kids on a field trip to an Orchard about 2 hours from our house yesterday. We picked about a gallon of muscadines along with hazelnuts, apples, and pumpkins. I intend to do something with each and starting with the muscadines. I'm kinda winging it....hahaha this can only turn out messily! Fortunately, even if its goopy it'll still taste good. |

Yeah, kinda like my wife's pomegranate jelly. More like a thick syrup, goes really nicely on pancakes. Good luck! |

I think it worked!! Took a smattering of recipes online and came up with this: Start with a bunch of these lil buggers (I used one gallon of them): Mash them in a pot, cover with 2 inches of water, bring to a boil and simmer for about 20 minutes: Strain and get rid of seeds and peels. Add 5 cups muscadine stock with one packet of pectin/SureJell and half a tsp of butter (to reduce foaming) and bring to a boil: Quickly stir in 7 cups of sugar: Bring to a rolling boil... Boil (rolling) for exactly one minute: Ladle into jars: I left about 1/4 of a cup in the ladle and just checked on it...it has cooled, jelled, and oh-my-freaking-goodness it is heavenly!!!! I made muscadine jelly all by myself and didn't botch it up!!! |

I don't have a recipe......but it's pretty much like any other jelly recipe I believe. And yes, muscadines are the ****! I have a vine that refuses to die in my yard, that is about ? 20 years old now? They are incredibly sweet once ripe. Oh, and you might find this interesting........I found this in a newpaper this year and hope to go next year... http://www.pelahatchie.org/muscadine.php Not sure how far that is from where you live.....here's a map location.... |

Cool! That's about two and a half hours away from me...if you go, let me know we can meet you there and you can stay with us. Wish I had a muscadine vine in my yard...and blackberries and huckleberries would be nice too. Ever heard of Mayhaws? |

As for getting a muscadine vine, they are easy to grow. http://forums2.gardenweb.com/forums/loa ... 13302.html You can grow them from seed, so save some next batch you pick I have a huckleberry bush ( think a bird pooped out the seeds, and poof! I had a bush). Problem with huckleberry, is while they taste awesome......they are a pain in the butt to pick. Takes a TON to make a little. I've stood outside picking for an hour, only to have a small bowl full. |
