Chicken Fried Steak is ... stupidly easy. You get some cube steak, which should generally be top round or top sirloin that's been hammered in the face with a meat mallet. Season some white flour to taste (salt, pepper, a little bit of chili powder or what have you). Flour the cube steak, then dip it in an egg/milk bath, then flour it again, and fry it in a cast iron skillet that's got about 3/4" of really hot oil (LARD is your friend here). |
