Post subject:  Tomato Basil Marinade

A friend of mine told me he gets tomato basil marinated chicken thighs from his grocer/butcher. He says he doesn't smell any vinegar or garlic, and is not sure what the liquid is that is being used. I'm assuming sun dried tomatoes, basil, and olive oil. I would like to experiment with something similar, but not quite sure where to start, since I'm not very good with marinades yet. Any suggestions would be appreciated.

I would assume basil, olive oil, and tomatoes in some sort of puree (either canned or roasted then blended). For a marinade, you usually have an oil and something acidic. The olive oil fits the oil and the tomatoes would fit the acidic part of it. Just my opinion though. And I would add garlic. Because everything's better with garlic.

You are sooo right Ienan...everything is better with garlic!! :D

I figured that would be the best way to start, but wasn't sure if I needed to add more acidity. Thanks for your input!! :)

You can use wine, vodka, or citrus.
