Crust: 1 1/2 cups of crushed Cinnamon cookies (Cinnamon grahams would work as well) 1 stick butter 1/3 cup sugar 1 tsp cinnamon (optional) 1/2 tsp nutmeg Crush the hell out of the cookies in a plastic bag with a rolling pin until they are the consistency of playground sand. Go nuts. Its fun. Make raaring sounds while you do it. It adds to the flavor. Put crumbs in bowl, add sugar,spices, mix. Nuke the butter until melted and add slowly to the mixture until its all well moistened. should be slightly sticky. Dump mixture unceremoniously into glass pie plate. Spread out and make the sound of a Caterpillar grading machine as you push the crumbs around into the semblance of a pie crust. Smooth with fork and make sure you don't have any empty spots. Heat in a 375 degree oven for something like 7 minutes or so. Remove and cool. Try not to break pieces off and eat them. Fail. Spoiler: Pies: 1 big can of Libby's Premium pumpkin goop. 2 cans of evaporated milk 4 eggs 1 1/2 cups sugar 2 tbsp cinnamon 1 tbsp nutmeg 1/2 tsp ground cloves 1 tsp ginger 1 tsp salt Put sugar, spices in a large mixing bowl and blend. Beat the 4 eggs in a different bowl and introduce them into the spice mixture and blend well. You should have a brownish, sugary, eggy slush. Add can of pumpkin to the mixture and blend thoroughly. You should now have a orangish, sugary, eggy, pumpkiny goo. Add the evaporated milk and blend about a third of a can at a time. The mixture will end up being a lighter orange, and relatively thin. Split mixture between the 2 crusts you just made. Spoiler: bake for 15 mins in a 425 degree oven. Reduce heat and bake for 45-50 more minutes @ 350. Remove from oven when a knife inserted in the center comes out cleanish. Cool for a while. Spoiler: |
