We had a huge party over the weekend, and had five pounds of uncooked chicken left over. My wife made her Portugese chicken and rice with half of that, and I had no idea what to do with the rest (since I was chicken-parmed out). She threw it in the fridge in some oil, garlic powder, onion powder, and chili powder to marinate; that way it would be ready for however we wanted to cook it later on.

So I started digging around in the fridge and cabinets to see what would taste good together. I found a whole lime left over from making drinks, a mostly full bottle of Johnnie Walker red label, a head of garlic, and a really old bottle of honey that was never opened. Also my Datil Peppers are starting to ripen so I grabbed one of those. I had no idea what it would come out like, but it was really tasty.

I haven't fine tuned the recipe to get quantities for most of the stuff, but here's what I used.

Spicy Sweet Chicken with leftover party supplies

Serves one. Adjust quantities as needed.

Ingredients:
1 chicken breast
1 lime
1 clove garlic
1 datil pepper (or substitute 1 habanero)
Bottle of Johnnie Walker red
Bottle of honey
Flour
Olive Oil
Butter
Spices (Salt, Garlic Powder, Onion Powder, Chili Powder)

Directions:
1. Marinate chicken breast in the fridge, in a bag, with a little olive oil, onion powder, garlic powder, chili powder, for 4 hours
2. Remove chicken from bag and slice into very thin strips, 1 or 2 inches long, as thin as you can reasonably get (1/8 inch, 1/4 inch)
3. Heat frying pan with a little olive oil and a little butter
4. Drop chicken slices into a ziplock bag with flour and shake until coated
5. Fry chicken pieces on medium-high heat until golden brown
6. Finely mince Datil and garlic, add to pan and fry for another minute. Include the Datil seeds for a nice spicy kick.
7. Add scotch, a little at a time, until it cooks down to make a thick coating on the chicken
8. Squeeze lime juice into pan
9. Add a little honey to pan
10. Salt to taste
11. Toss
12. Serve

I like the title of the recipe. And, you forgot a step:

7A. Drink leftover scotch.

I just ate it out of the pan, pretty much.

NOTE: Tried to adjust quantities last night for a quadruple batch and it came out really not tasty. Think I used too much scotch maybe.
