Post subject:  Roasting Chickens Question..

...I normally roast just one 4-5lb chicken but tomorrow morning I need to do two. I only have one roasting pan....anyone know whether I need to lengthen the time or what? I have a thermometer so I'll know when it's done, I just need to know how long it will take to cook them because that determines what time I have to get up in the morning... :?

Totally guessing here, but I would suspect that you shouldn't have to lengthen the time too much - depends how snugy they fit into your roasting pan. If they're touching a lot, then you might have to lengthen it, say, a half-hour? Or, just check that spot where they're touching, with the thermo. You might even lower the temperature if it's a snug fit, so that the parts that aren't touching don't get overdone.

I hear ya, though - stuff like this always makes me nervous, thinking I'm going to poison the whole family or something. Usually leads me to overcook the food.

OMG that is SO me! That's why I broke down and bought a thermometer. I check the temp constantly and wash the thermometer with soap and water in between prods. I am beyond obsessive about food safety and everything I cook is always slightly overdone.

Remember to pull the chickens when they are ten degrees below your final desired temp. then cover with a tent of foil and let rest on the counter. They'll keep cooking and will come out perfect, not overdone.

Yeah, good advice, this. Which I always forget, of course.

So, LK, how'd your chickens come out? Anyone laid low with food poisoning?! (Seriously sorry if they are, but I couldn't resist.)
