I was in the mood for meatloaf but wanted something different. Just put it in the oven a little while ago so we will see how it turns out. 2 lbs Ground beef all measurements below this are approx 1 small can green chilies 1 small diced onion 1/2 cup panko bread crumbs 4 smoked ancho chilies from a can 2 tsp minced garlic 1 tsp Hungarian paprika 1 tsp chili powder 2 eggs 1 tsp Worcestershire salt/black pepper/red pepper topper sauce from the ancho can mixed with ketchup and Worcestershire and spread across the top We will see how it tastes it is smelling pretty good right now though. |

It actually turned out pretty good. It had a light slow heat, not burn your mouth right away, it did build up though. Next time I will use a little leaner beef as the stuff I had was a bit fatty. May adjust the spice ratios a little bit. The sauce on top was really good, might try some pepper jack cheese on it next time as well. |

Use a leaner beef, and cover the top of the meatloaf with bacon before cooking. |

I like making my meatloaf with two pounds of extra lean ground beef, a pound of ground bison and a pound of ground lamb. I then weave a pound of bacon (or two) into a lattice over the top of it when I put it in the oven. |
