So Saturday night we went out to this raw bar seafood place. I ordered 6 oysters on the halfshell called Naked Cowboys. I cant even tell you how amazingly good these things were. Fresh, tender, little bit of fresh ground horseradish on it, tiny bit of cocktail sauce. They were big too. God I want to go back right now. |

Raw oysters? You'd have to have a pretty severe shellfish allergy. Oysters are served on the half shell in just about every East Costal restaurant of any quality. |

I looooooooove raw oysters, and living walking distance from the Chesapeake Bay, they are extremely prevalent and exceptionally yummy. That said, oysters are filter feeders, which means they suck water in, filter pretty much everything out of the water, and eject the filtered water. This means they retain a lot of material you don't want to eat. Especially raw. So yes - it's a risk. Fun facts: Each oysters cleans up to 50 gallons of water each day. Before white people arrived in the New World, there were so many oysters in the Chesapeake Bay that they would filter the entire Bay in a week. Now, if left alone (not harvested) it would take the remaining oysters over a year to filter that much water. We're trying very hard to repopulate the historic oyster beds. The Chesapeake Bay needs this filtering system. |

I'm excited. We're doing a general seafood boil for Good Friday... I'm doing blue crabs and shrimp, and I've got a friend with a hookup for 2 sacks of oysters. We're planning on eating about half raw and the other half grilled. Whee! |
