Do you rest your meat after grilling it? If so how long? And which meats? |

Anything that has an option of being cooked at different levels (rare, med, well) should probably be rested. How long depends on who you ask, some people say half/quarter of cooking time, some people say 5-10 minutes flat. I generally let steaks sit 5 minutes or so. |

Yeah, 2-3 min and speaking of, DON'T smash them down on the grill! Don't know why people love doing that. |

When you smash it down you can tell how done the burger is by seeing how much blood comes out. As for resting meat... It isn't something I think about. I cook, bring the food in the house. By the time everyone gets around to eating, it is pretty well rested...hehe. |

Burgers I struggle with, I always end up with a giant... pouch... of... meat juice. *sigh* Anyways, so the first bite sends a jet of scalding hot meat-juice shooting in some random direction. |

Steaks definitely need to rest. Not only how long (10 minutes or so?), but, where - use a glass dish, covered. I made the mistake of resting some meat on a cutting board, and it came out pretty bad - very dry, because all of the juices had run out. You want to keep the juices in, while letting it cook internally for another 5 minutes or so. Remember that the temperature will continue to rise by five degrees or so after you take it off of the grill. I rather like this page for grilling tips. Oh, if you want a real treat - try grilling a tri-tip. It's actually more like barbecueing, because you have to cook it for about an hour (which of course is way less time than real barbecue, but more than grilling a steak. This page says to do it for 15 minutes a side, but I went with the technique on this page, and was pretty happy with how it came out. Better yet, look up Santa Maria Barbecue recipes for tri tip. You'll never go back. |

Generally about 5 minutes. That's how long it takes to get all the kids in their seats anyhow. I rest it on the plate it's actually served on. Whenever possible, I smoke my steaks anyhow; I don't grill them unless there's not time for smoking, which takes a little over an hour. You cook it about 3 minutes on each side, then without flipping again, move it off to the side of the heat for an hour or so. |

Perhaps you should start! I find it's cheaper to buy ground beef and make patties than to buy patties already made anyhow. |
