I've never seen most of those guys in their element. Shamrock, Seagal and Norris are the only ones I've actually seen in action and I'd have to give it to Seagal based on the fact that I've never seen Li, Chan or Van Damme outside of movies.

Shamrock is an old, old man now. After getting his **** ruined three times by fat-head Tito Ortiz, his career can come down to getting his legs kicked to death by irrelevant but not incapable guys. Watch the recent Pedro Rizzo match.
I would say Seagal has a good chance against Shamrock due to his style and size. We know Shamrock is strictly a one dimensional catch wrestler with non-existent striking skills. His submission skills were very, very good, but people have caught up in that game and mediocre skills in an aging body as his athleticism wanes by the day. There's only one old man who really has stayed somewhat in the game, Randy Couture. But he's a freak of nature.
However, Seagal is even older than Shamrock, but his career and style of martial arts doesn't lend itself to aging the body at an advanced rate like Shamrock. I'd be interested in learning if he practiced any other styles. If he has any Kodokan Judo at all, he'd give Shamrock fits. However, Seagal's style is strictly for dealing with self-defense situations, not mitigating other fighting styles which gives Shamrock another edge. However, competitive fighting like freestyle, Pankration, Vale Tudo and MMA don't concern themselves with fighting in anything but "ideal" conditions. If this were to happen in a bar or any place with uneven surfaces, obstacles to navigate around and the like, Seagal might have an advantage in that aspect.

Another celebrity martial artist I found out about is pretty boy Paul Walker. After watching him triangle choke Vin Diesel in the latest Fast and the Furious movie, I wondered if he had been instructed specifically for that scene, or if he actually practiced Sambo/BJJ/Judo. He is a purple belt @ Paragon in under Ricardo "Franjinha" Miller. No idea what his lineage is, but he has some impressive credentials.

Of the ones you mentioned, Shamrock at his peak, but I would give Seagal about an even chance.

Well, besides the fact that Bruce Lee would tear them all apart....I would say Jackie Chan in his prime would be the most difficult to beat out of the names listed.

I know all the jokes about Chuck Norris, but the guy was the Middleweight Karate Champion for 6 straight years. Meaning, a professional fighter. He destroys Chan and Jet Li, Van Damme, and likely Bruce Lee by the way, who so far as I know are actors that are well trained in martial arts. As for Shamrock, he's a fighter and I believe has a good deal of height and weight advantage, other than that I dont know much about him.
Segal, he's another actor. The only thing about him is his size, google says he's 6'4, but I'd still have my money on the pro fighter.

That said, I think I am going with Jet Li - he seems the most currently in shape and is still pretty skilled.

I'd add Wesley Snipes and Tony Jaa.
I don't know how I'd make an "elimination bracket" because I'm unsure of the original positioning/pairing. However...
Jean-Claude would lose to whoever he fought in the first round, as would Jackie Chan.
Shamrock and Jaa would depend heavily upon who they fought.
Snipes, Norris, Li, and Seagal are all contenders, but I wouldn't go so far as to say "evenly matched." The strongest in the field are Norris, Li, and Seagal, to my mind.
Who would win ultimately? Not sure I could say definitively, but probably Seagal. Which, as Monty said in the other thread, just feels.... wrong.

In their prime, of the options in the original post probably Shamrock, with Segal being my #2 pick. Their size alone gives them a huge advantage against the smaller guys on the list and Shamrock, limited as he is, is still more multi-dimensional than most of these guys...
When I saw Shamrock was included on this list, I couldn't help but giggle at the thought of what Brock Lesnar would be capable of doing to some of them.

I'm revising. First, because we are talking about people at their peak, which I overlooked, and second, because the frame of the fight is unclear.
What are the rules? It is an MMA match? Are there rules at all? Is it kickboxing? Bare knuckle sparring?
That changes things considerably. Both Van Damme and Norris are champion kick boxers. If it's kickboxing, it's those two in the finals. Jet Li and Jackie Chan are both serious martial artists, despite what we see in the movies.
