So...they had a world premier of the first episode of season 1...in black and white? Why?

Because Frank Darabont likes black and white, particularly for something as "inspired" by Night of the Living Dead as this. The Blu-ray of The Mist featured a black-and-white viewing option as well, specifically timed for B&W.
