I wouldn't say they are central, but they are not a small part. The majority (read: screentime) of the original trilogy was more about spaceships, blasters, daring rescues and escapes. Jedi are just more flashy, so people revolve around them more.
Jedi are the wizards of the star wars universe. Sure, Ed Greenwood sells a lot of Elminster books. But there's a hell of a lot of other cool books and games where the main character does not use magic.
My main and favorite character in SWTOR is a Sith Warrior, so I am not averse to force users. I just like to take a break from it now and then, because the other parts of the Star Wars universe; the lived-in, futuristic, cool spaceships, fly by the seat of your pants also can make for some amazing stories and a hell of a good time. Plus any non-force user that can take out a Jedi/Sith is far more interesting and heroic/menacing to me.
