Which is the correct position of the word "be"?

I prefer the second. "what would be the" is four contentless words in a row, and the reader's eyes could glaze over.

I prefer option #1, although I cannot at the moment provide any solid grammatical rule to back it up.

How does that indicate to you that you won? The more stylistically correct sentence structure is more commonly used on the internet. While this somewhat surprises me, it should not be evidence against its preference.

There were many 'correct' aspects of English that died out over time as they became obscure. The most popular way people speak is also the most proper way.
