I've recently become obsessed.
http://allrecipes.com/recipe/eggplant-parmesan-ii/Pretty good recipe, but I differ a bit. First, I have to use gluten free materials for my wife's sake. Second, I don't bake the eggplant first, but fry it in olive oil in a skillet until the breading is browned and crisp. Otherwise, this recipe is pretty close.
I've also used squash instead of eggplant, depending on what's on hand. Both were good.
Now I need to go buy more eggplants......
Maybe I can grow some this year.
