I think it would cost more anyway, RD. Producing a pound of beef consumes infinitely more resources than producing, say, a pound of grain.

This may have something to do with it, but it certainly isn't everything. Hamburger you can process, and then freeze it for a month, then cook it up. The components for a salad have to be processed, shipped, and eaten, all in a relatively short time.

Symptom, I'd say. SO MUCH is being given away (the disease) that googling "subsidy total dairy OR beef OR meat site:.gov" comes back with boatloads of stuff but too much to sift through.

Another way to look at it is that if it was at least a bit above board and unambiguous, there wouldn't be so much being given away.

At this point though, there really isn't a difference in the reality of the situation, is there?
