of the restaurant industry. With the economy as it is, and worsening by day, the industry has suffered to the point that it is no longer lucrative enough to keep me there. I have moved onto bigger and beter things.

60% of all restaurants fail in the first 3 years.

Sorry to hear that RyRy. From your posts...I would eat at your restaurant as often as I could afford it. You sound like you have a knack for food...I hope this is just a bump in your culinary pursuits.

Sorry for some misconceptions here. I haven't owned a restaurant for quite some time now. I have a catering and prepared foods business (selling soups and sauces), most of the prepared foods being sold to local restaurants. This was actually far more lucrative than owning a restaurant itself, as it gave me 100% control over costs and waste. However, business has dried up, and many of the restaurants and bars I service are failing. I speculate that this is because dining out is a luxury, and when times are tough, luxuries are the first to go.

I have gotten out of the industry entirely. I was presented with an opportunity which was too good to pass up, and aligns well with my other passions.

That said, yes Khross, I am aware of the three year rule. Thankfully it's not applicable here. I'd like to try and open one again, some day, but not until I am far better capitalized.

I'm sorry to hear that, Rynar, but I'm glad to know that you're able to pursue other interests. I had always hoped that if we ever managed to get up that way, we'd be able to patronize your establishment.

If you ever manage to make it up this way, you'll have to come eat at my house. :)

I don't think Rynar would ever have served you his poo food.

Thanks, Monte. It's my dream job, to be honest. I'll always miss the restaurant industry, and I'll likely be back again in the ownership capacity in my retirement, hopefully no more than 20 years from now. The new job allows me to make my own hours, and spend a ton of time with my family; while being stress free and at the same time being directly ties to economics and politics and very lucrative.

Pfffft ...

Owner/Operator is always a stressful gig; you know that :P I mean, honestly, the only guy I know who reliably holds onto his restaurants and makes a decent amount of money out of all of them is universally reviled as the biggest ******* in the business. And, while he's certainly a competent chef, his true gift is restaurant management.

Gordon's really not that much of an *** in person. Like I said, his true gift is restaurant management. Emeril Lagasse and most other "big name" Chefs generally go 2 or 3 and out on a place. 2 and out is a common strategy, because you sell for a sum greater than total investment and leave some schmuck to eat the losses. It is, in fact, a really common practice with night clubs and bars as well. Gordon Ramsay at least knows how to run a profitable establishment with decent food. And if you watch Kitchen Nightmares, everything he's telling the owner/operators in this shows is true and applied in his restaurants.

No, he really isn't. It's am image he uses, which is built around the "chef as primadonna" stereotype, to market his TV show. That and everything else Khross has discussed in this thread are 100% true. There is nothing more stressful than attempting to make money in a luxury industry with a perishable inventory, and a labor pool that is made up largely of uneducated substance abusers.
