Primary colored gems....Red, Yellow, and Blue....all have one major stat. (example: Bold Cardinal Ruby +20str)
Mixed colored gems.....Purple, Green, and Orange....have a mix of stats. (example: Accurate Ametrine +10 expertise and +10 hit)
Primary gems give you the benefit of major stats usually, and give a bigger amount to that stat, but only count as ONE color. Mixed gems give less to a stat, but give a mix of stats, and count as TWO colors. This is important in that it allows you to activate socket bonuses and meta gem requirements.
Prismatic gems cover all bases in terms of color. A prismatic gem will count towards every color, thus having one socketed in your gear will usually make it much easier to make the requirement on your meta gem in your helmet. The most popular prismatic is the Nightmare Tear, because it's the highest value gem of that kind....+10 stats. You can use the lesser versions if you don't have the gold, or it's a piece of gear you will quickly replace.
Meta gems all have a requirement. Some are harder to achieve depending on your spec. For tanks you would want to get a meta that would be mostly blue gem dependent, since you are likely to be using mostly stamina gems.
As a general rule (not all) purple gems will give you a stat plus stamin. Green gems are going to give you mp5, and orange gems are going to give you +hit. Of course there are some different combos, but if you are looking for those stats, that would be the gem to look for.
