Eyebrows. Weird, I know. Hips (wow, I thought I was really off-the-wall on that one, too), eye shape, facial shape/structure, hair color/straightness. All are things that catch my eye for women. Not all of them have strict preferences (like hair color. I don't "prefer blondes" or "go for redheads" or whatever). Just things I tend to see and go "wow, that works for her."
For guys, what stands out in a crowd are mostly height related. Tall people, obviously, stick out in crowds for me, and I notice short guys in small groups. I also tend to kind of file people away in "tall, about my height (which is pretty average, and this range is probably an inch or two either way unless I spend a lot of time around them), and wowshort" when it comes to guys. It doesn't really matter to me (it's not like I hate short people, or I'm sizing everybody up for a fight), but it's just something I'm aware of for no reason.
