 Post subject: Vodka Sauce

Made tonight.

3/4 lb chopped proscuitto
1 cup vodka
2 tbsp basil
2 tbsp parsley
large clove of garlic, minced
salt and pepper to taste
16oz tomato sauce
1 1/2 lb roma tomatoes
1 cup heavy cream

Brown proscuitto in ev olive oil until... well browned. Add basil, garlic, parsley, and S&P while browning. Pour in vodka and simmer for 10 min.

Smash tomatoes into lumpy tomatoey bits. I used a potato masher and a food processor. Throw in tomato and cook through about 15 mins.

Add in heavy cream and cook for another 2 mins or so.

Serve over fresh pasta.

Nom.

I just don't understand the point of vodka sauce.

Vodka has little taste, if any, it is just a way to get alcohol into your system.

Most if not all of the alcohol evaporates in the cooking process.

This leaves you with just the non-alcohol content of the vodka, water.

Therefore, if you need to thin your sauce, use some decent water, or if you want to add taste to your sauce, use a good cooking wine, maybe even an off label bourbon if you want to make it taste liquorish. Anise if you want it to taste like licorish

Still, if you enjoyed it Müs, wonderful, I'm happy for you.

The flavor of the vodka is absorbed by the proscuitto :) And yeah, there is a flavor as not all the alcohol cooks off.

And ha ha. I fixed my freudian slip ;)

So, just lie down on the couch over there. How long have you considered potatoes to be a Freudian aspect of life. They tend to be a little lumpy or deformed to represent a penis. The fingerling potatoes might work but they are relatively new, and still deformed for a penis. You know Müs, sometimes a spud is just a spud.
