One of my favorite summer foods.

I hate making it, so I usually have to settle for whatever the deli has.

My current favorite from my local deli is called "Deviled Egg Potato Salad". It's yummy.

Anyway, I'd be interested if anyone has any recipes they'd like to share...

No recipes to share, but potato salad is yummy...there is a version down here with mainly just potatoes, bacon, and mayo/sour cream with chives I think...no eggs or mustard or pickles or onions...its pretty tasty.

Oh, and just for the sake of conversation.

Sweet Pickles DO NOT BELONG IN Potato Salad. This was a major debate in my family. My Father always insisted on sweet pickles. Everyone else hated them, so we ended up with two batches (love ya Mom!).

I'm pretty sure the deviled egg recipe the local deli uses has yellow mustard and dill pickles..

I love the ones with mustard and dill pickles. Who puts sweet pickles in potato salad? For that matter...who puts sweet pickles in anything? I can't think of a single occasion where sweet pickles would be appropriate. Yuck.
I've never made potato salad before...huh. Maybe I should give it a shot. Looking forward to this recipe search. :)

I'm not a fan of mustard in potato salad, myself.

I grew up with very simple, rough cut potato salad- celery, eggs, potatos, mayo and some sweet relish. Best eaten fresh and cold with BBQ!

For a more every-day potato salad, we like the "german" type potato salads a lot- potato, eggs, bacon and celery, mixed warm with oil and vinegar. You can either cool it down from there, or eat it warm as you like.

Never had sweet pickles in potato salad, but I have doctored my Deviled eggs recipe to contain a little bit of sweet pickle relish.

My mother in law makes the most incredible potato salad in the world. Thick, rich, and a little bit sweet. Yum.

My aunt used to make a macaroni salad that I just love! Macaroni, her homemade sweet pickles, onions, cheddar cheese cubes, with a ketchup/mayo dressing. Wish I had gotten her sweet pickle recipe before she died, would love to make some, they were delicious.

On the macaroni salad line: I make something that's a nice simple dinner/lunch/potluck contribution.

Mac&Cheese (homemade or boxed), then while it's hot mix in: Cream Cheese (to make it a bit creamier), frozen peas, drained canned tuna, and some sweet or dill relish as you like. I additionally like to season mine with a liberal amount of "Slap Yo' Mama" cajun seasoning, although that's personal preference.

Chill and serve!

Neph that sounds yummy! I make the same thing except I don't add cream cheese or relish...just the peas and the tuna and a boatload of black pepper. Yum!
Oh, and I eat mine hot, not cold.

Dill pickles (chips) are great on burgers. I can munch on a whole dill pickle as long as it's nice and cold and crisp.

Can't stand sweet pickles in any form (including relish).

Here is my Mother's Award Winning Potato Salad. The southern black women she worked with said her's was better then anyone else's. Secret---"Sugar"

5lbs. red skin potatoes
7 hard boiled eggs
1/2 lg jar of Helman's Mayo
1/4 cup of Yellow mustard. More if needed for color
2 TBs of salt
Little sprinkle of Pepper
Little sprinkle of Paprika
Chopped parsley- good amount to see throughout salad
1 Tbs of Cider vinegar
1/2 cup of sugar or tiny more.
too think add 1 Tbs milk/ too dry add more mayo

Boil potatoes
Drain let dry at room temp. Not touching other potatoes- 1/2 hour
Peel and Cube potatoes
Hard Boil Eggs
Slice into chopped small pieces-set aside one egg for top of salad
Separate bowl mix other ingredients for dressing- Mayo-Mustard- Parsley-Vinegar-Sugar
Salt and pepper potatoes
Incorporate dressing
Milk if too thick ***NOTE*** My mother's potato salad is really thick anyway, so don't think you need to thin it out completely
Mayo if too dry

Put in nice glass bowl for presentation
Slice one hard boiled egg extra to decorate top
Sprinkle top with Paprika
Garnish top with more parsley

You'd think that, but Oonagh can't tell if her mom's is actually the best because she (Oonagh) doesn't like Potato salad. She has to trust the opinion of others on this, including mine. In this case my opinion is that her mother's potato salad is the best. My mother's is probably the worst. Here is the recipe:

Potatoes, mostly cooked, some left crunchy
Mayonnaise
Salt
Pepper
Celery

Mmm, mmm, terrible.
