Jersey Mike's is pretty good, too, and probably more nationally available than Penn Station.

I can't abide people I care about eating at chains. Stop doing that. Find a few good local sub shops, tell them exactly how you like your favorites made, and tip them well. Not only will it be the best sandwich you've ever had, every time, but they might even name it after you.

Ironically, I get the kind of service mentioned in that post at a chain place, locally. They bend things, wave off doing us favors with "They come in here all the time, do what they ask", and the like.
