I've made it before, and it was well received, but i think i can do better.

Any of you make it? What are your favorite recipes?

So I have a twist on a traditional jambalaya that I like quite a bit- it's made with Orzo, tomatoes and a touch of (OK, a bit of) cream.

Sautee the trifecta (celery, green peppers, red onions) with garlic until they're nice and aromatic. Then add a bunch of sausage. Good sausage. Some smoked chicken if you have it. Continue sauteeing, throw in some seasoning (Slap Yo Mama works great if you have it).

Cook some orzo.

Add diced tomatoes (I like fire roasted) or cut up fresh tomatoes if you have good ones to the sauteeing meats and veggies. Get it good and hot and well seasoned, then cut the heat and add cream, then the pasta, and stir it all up.

I make about 5 qts of this in a cast iron pan on the stove, and it's very good.

Traditional jambalaya would go similarly, but you'd cut down on the tomatoes, cut out the cream, and add rice instead. And you'd thicken it up with a roux.

If you're going for a creole jambalaya instead of cajun, then you add the tomatoes back in.

And you an also do variations on a theme with seafood of various varieties, which are very similar to a good paella, except cooked entirely on the stove.

Dunno 'bout jambalaya, but I've been itchin' lately to try my hand at gumbo.

Hubby used to use Emeril Lagasse's jambalaya recipe for Super Bowl Sunday when the boys were still at home. I highly recommend it as it's fairly easy and very good.

I don't have my exact recipe handy right now, but I used shrimp, andouille sausage, and chicken for meats. Celery, onions, bell peppers, garlic, diced tomato. Cumin, cayenne, chili powder, thyme, chicken broth, and olive oil.

Serve over rice.
