 Post subject: Guacamole recipe needed

Tried making guacamole with a recipe I found on the net. It was OK, but lacking in the taste department.

I would like to know if anyone has a tried and true, tested recipes or tips. Mine came out not as thick (almost watery) as I expected and kind of flat in the taste department.

Wasn't sure what to add more of to correct the taste. Salt, onion (I used white...should have been red), cilantro, lime?

Cilantro and lime are a must. I like diced tomatoes as well but that's a personal preference. Something for a bit of spice, my preference is serrano peppers.

I've never used red onions, they may be a bit strong for the rest of the ingredients.

Avocado's. Smashed.

Salt and pepper to taste, a touch of lime and lemon.

If you want, garlic powder, a diced bit of onion, some cilantro and diced tomato.

But really, it's all about the mashed avocado.

What did you add to make it watery?

Yeah if you hadn't added much liquid they shouldn't have been watery. Could've just been bad avo's.

The avocados were nicely ripe and smooshy. Maybe it was too much lime juice, I squoze a whole lime worth of juice into it thinking that is what the missing flavor was.

Avocados are supposed to be sort of firm, not smooshy :) If they are smooshy they're over ripe, at least for guac.

If you added a ton of lime juice that was probably your biggest mistake.

Yeah, it should take some effort to mash them, and there should be nice defined chunks in it, imo.

Did you add much garlic? I find some garlic powder, salt and pepper does wonders.

Avocados, minced garlic, minced onion, peppers of your choice (I use serranos) seeded and minced, chopped cilantro, lime juice.

Smash the avocados until they are to your consistency preference, add the other ingredients and stir together well. Open a bag of tortilla chips and dig in!

Cumin is my secret ingredient. Garlic powder, lemon juice (mainly because we have a lemon tree, no lime tree, I guess). Chopped up tomatoes .. cilantro, and peppers of your choice. I sometimes just use ground cayenne pepper.

A Jalapeno, freshly chopped, should add to the flavor. Hotter peppers rather than more peppers if it isn't enough.

2 large avocados, smashed thoroughly.
1 cup diced tomato
4 scallions or 1 small onion, chopped finely
2 tablespoons lime juice
2 tablespoons chopped cilantro
1 tablespoon olive oil
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon worcestershire sauce
1/4 teaspoon pepper

optional: chopped jalapeno pepper; quantity according to your taste.
