So other than the bicycle speedometer, anyone seen anything cool done with one of these? Done anything cool with one?

Looks like a very cool platform for teaching basic coding/computing, and very cheap to get started on.

Have thought about getting one of these for some of the people in my life without any reliable computer (grandmother, mother in law), as I'm pretty sure even in a basic, minimum configuration it's better than what they have, and a lot more customizable.

We're experimenting with using them as wireless receivers for streaming feeds on campus for signage and the like.

I have heard of, but see no documentation of, using a small bank of them for speeding up registration at conventions. The Pis are hooked to refurbished monitors a keyboard/mouse, and a network. The only thing try running on the Pis is the registration software. Sounds good but I'm not enough of a programmer to follow everything it would require.
