Yeah, I saw this the other day, and can't figure it out.

The ones where they're eating seem like maybe the owner stealthily introduces a foreign, unfamiliar object while the cat isn't paying attention, and thus the cat is startled when they notice the unexpected change in their environment.

But then there are the ones on the table and such, and that's just weird. Are these just coincidentally similar reactions to strange objects (I've certainly seen cats react kind of that way on occasion when investigating something), or is there something cats find particularly distressing about cucumbers?

I'd imagine it's a snake-response. Many are introduced while they're busy sucking down the wet food, so the next thing they know they turn around and there's this snake-like thing next to them that silently appeared. Same thing for just coming across one on the counter, I would think.
