Why do I end up with a head of cabbage every time I go to buy lettuce? I even made sure to read the label but apparently I read something like this "Green cabbage"

Kimchee can be made from just about any veggie. I'm not fond at all of cabbage kimchee, but freshly made Cucumber Kimchee (or "Oi Kimchee" as its pronounced in Han Gul) is quite delicious!

Edit: the variations I've had did not have radish or fish oil, which most recipes i've seen seem to contain... I guess I'd be willing to give it a shot though...

The restaurants I visited in Korea just diced fresh cucumber and added some salt, garlic, and crushed red pepper.. maybe a few other seasonings...

Having worked a couple years in a produce section at a large chain store, I can't imagine ever being able to make the mistake. The weight alone would be sound alarm bells.
