I prefer thin crust, but I don't really think of "NY-style" as thin crust. Funny thing is, I grew up within jetpack-distance of Chicago, and never had Chicago-style until I'd grown up and moved away. It was always cardboard-thin crust for us; not so good reheated, but pretty damn tasty when fresh.

Yeah, it's bad, isn't it? I can just taste the sausage and crispy crust right now. At least work is buying lunch today, although I don't think it's pizza.

For the foodies out there. This is the recipie I have adopted for my own use. (edit, by the way, use AP flour)

Amount Measure Ingredient -- Preparation Method

2 pk Yeast
2 c -Tepid water
1/2 c Salad oil
4 tb Olive oil
3 c Flour
1/2 c Cornmeal -- I think this is
-the secret
2 ts -salt -- Frugal Gourmet does
-not have salt in dough
2 1/2 c Flour
-Sauce
2 cn Plum tomatoes 28 ounce
-drained -- crushed; drained
1 Mozzarella -- to taste
1 pn -salt -- ground pepper
1 -garlic -- chopped; to taste
1 Basil -- fresh; chopped
1 Oregano -- fresh; chopped
1 Meat -- choice
1 Onion -- etc; choice
1 Parmesan -- to taste
1 Romano cheese -- to taste

Mix two packets of yeast in 2 cups of tepid water and let sit for ten
minutes. Add 1/2 cup salad oil. Add Olive oil, 3 cups flour; cornmeal
and salt. Knead for about ten minutes. Add 2-1/2 cups of additional flour.
Knead this for 15 minutes. Let dough rise to twice its size. Use blackened
deep dish pizza pans. I'm not sure how you get 'em blackened - I cured mine
with olive oil and then I just wipe them out when I'm
done. They are kind of getting blackened looking with use. I have two pans
and make two pizzas at a time. I spread the pan with olive oil and sprinkle
with cornmeal. Divide the dough in half. Spread and cover the bottom of the
pan. Spread it up the sides. I then let it rise again in the pan. Cover
pizza dough with sliced mozzarella. Drain and squash a 28 ounce can of plum
tomatoes for each pizza. Drain off the excess fluid after squashing, and
spread this over the cheese. Smidge of salt and ground pepper over the top.
Chopped garlic, fresh chopped basil and oregano. Add the filling of your
choice (I use sliced onion and Italian Sausage). Top with a Parmesan/Romano
Cheese mix. Bake in preheated oven at 475 degrees for 35-40 minutes.

I feel pizza is like sex; even if it is bad.. it is still pretty good. All pizza's serve their purpose. Chicago style is awesome for a good sit down dinner, New York style is good for a quick bite to eat, and frozen aisle pizza is good when you just want a pizza fix and refuse to consider Little Caesar's pizza as a valid substitute for food.

Neither. Thin crispy crust pizza any time. If I'm forced between the two I'll take a deep dish I guess.

New York style pizza is nasty stuff... giant floppy slices of greasy dough? Please. My area has a ton of NY transplants and all we have around here is fifty different places that make New York style pizza.

Though if we're talking Chicago Style i'll take a red hot any day. /drool

California thin crust style is nowhere near as greasy as the New York style.

Only one New Yorker I've ever met has admitted they like the heartier crust in California, most complain it doesn't fold properly.

Aw, darn. It's not lookin' good for you in the heart of the South. If you find yourself travelling, though, and spot an Uno's; it's the best Chicago-style you'll find most places (short of Illinois; Chicago has lots of less commercialized authentic options -- though, Ienan, when you go back, go to Duo's sometime, it's one of a kind (even if it's really Uno's, so not exactly.. there's still only one Duo's, though, so fun to say you've been)!) and my general recommendation to people who need to try Chicago style.

Don't worry Kaffis. I'll do Duo's at some point I'm sure. I plan on making my trips to Chicago every year or two, as long as my best friend is still living there.
