Spinach + Cheese Ravioli with Olive Oil and Garlic sauce.

Although I apparently boiled the ravioli too violently, as the fillings burst from a couple of them.

three (3) large Spanish onions (diced)
one (1) large bunch of celery (diced)
four (4) large carrots (peeled then diced)
one (1) can whole kernel corn (drained)
five (5) lbs. of red bliss potato (peeled and cubed)
one eighth (1/8) lb. butter (one half stick)
three (3) - five (5) lbs. of various sea foods of your choosing
five (5) chicken bouillon cubes
four (4) bay leaves
two (2) tbs. Old Bay seasoning
three (3) tbs. oregano
four (4) tbs. kosher salt
two (2) tbs. black pepper
one (1) tsp. white pepper
one (1) tbs. dill
two (2) 50 oz. cans of chicken broth (you may substitute clam juice for up to half)
three (3) quarts heavy cream
one half (1/2) lb of roux. (combine unsalted butter, and flour at a ratio of 1:1 oz. over low heat. Mix often. Desired results will be thick and dry/clumpy, be blonde in color, and smell like fresh sugar cookies)

In a large stock pot sweat down onions, celery, and carrots in butter. Once softened add all herbs and spices, bouillon, and both cans of broth. Bring to a rolling boil, and add potatoes. Cook until potatoes are al dente'. Remove from heat.

Add all seafood, and broth or brine contained with seafood, as well as corn and heavy cream. Cover, and simmer on very low heat for one hour, stirring frequently.

Slowly stir in roux, working at a boil, to desired consistency.

Enjoy.

Thank you Rynar! That sounds wonderful, but I will have to cut it down some, since hubby can't have seafood so will be cooking just for me. I will be trying this soon though! :D

No problem. I would also suggest substituting the butter in the recipie for bacon fat if you have it available to you, I always save mine and freeze it. Another tip is to add a few tbs. of Frank's Red Hot at the same time you add the cream.

Ooohh...didn't know I could freeze bacon fat! I don't have bacon often, but from now on when I do I will freeze the fat! I used to mix it into the dog's dry food, but since she is gone now... :cry:

Tonight we had bison burgers hot off the grill with sharp cheddar melted over them...served on EarthGrains multigrain thin buns with all the usual suspects for condiments and toppings...I'm stuffed!! :D
