Assuming you have a deep pie dish, here's another easy, but maybe not so quick recipe.

Line a pie dish with a thawed piece of sheet pasta. Not fully thawed, but thawed enough you can force it to conform to the pan. Put in ground beef, ricotta cheese, a can of seasoned, diced tomatoes (Del Monte has a spectacularly good can for this), and shredded mozzarella (just mix all of that losely) and partially cooked (ie just bendable) fettucine. Cover with another sheet. Bake for 25 minutes at 375. Cover with more mozzarella and bake until the cheese starts to turn brown.

That's Ninja Lasagna.

I've done that as well, although I usually substitute ground pork for beef, and add spinach and mushrooms if I have them.

Taking us out of the realm of quick and easy, you could make a duxelle. For my own tastes I don't mind the moisture at all, however.

Oh, and since I'm on a fast Italian kick ...

This is FAST, but maybe not easy.

4 slices of mozzarella cheese
4 slices of eggplant
2 large eggs
1/2 cup of flower
1 tsp garlic powder
1/4 tsp black pepper
1/4 tsp dried oregano
1/4 tsp rosemary
1/8 tsp thyme
1/8 tsp paprika
1/8 tsp cumin

Fill a medium frying pan with olive oil and bring to a medium heat ...

Mix all dry components in a bowl with the flour.

Flour the eggplant (should be cut fresh) and then dip it in the egg.

Flash fry the eggplant until the egg a very, very bright yellow (30-45 seconds).

Place eggplant on a baking sheet and stack cheese between it. (3 slices).

Cover tomato sauce or marinara of your choice (quick and dirty marinara works).

Place last slice of mozzarella on top and bake at 325 for 20 minutes.

Serve with a side of uncovered pasta of your choice.

Nah, I love mushrooms. They just need to be properly prepped for use in a real lasagna and slow sautéing mushrooms and cooling them for chopping is time consuming.

And NOW, for something completely different ...

This is splendidly fast and easy, we're talking ... 10 minutes.

Get a bag of your favorite, fast cook yellow rice and put it on to cook following the directions.

Take one (1) half-pound (1/2 lb) pork tenderloin and slice into quarter inch medallions. Lightly pepper and salt both sides and pan sear in olive or ultra light soy oil (for this, I prefer soy).

In another pan, caramelize in butter one whole sweet onion, add 1/4" can candied cranberries, 1/2 oz. red wine, and cook until you have a gorgeously red-purple and mostly translucent sauce.

This also works splendidly with venison medallions. The trick is to cut the meat thin enough that you can cook it quickly and evenly without deformation in a skillet.

Drizzle over pork medallions and serve next to rice with 3 or 4 pieces of steamed asparagus.

Again, I think lots of folks here would be fun to play with, but I've always found it to be alot more fun to cook with friends than against them.

Totally agree. They tried to get a cookoff thing going here at work a few times, but I helped convert it over to just a good old eatfest.

My wife does puff pancakes or dutch babies for quick dinners. Pretty basic recipe, the dutch baby can go together in a blender, the puff pancake she does by hand. Pour the batter into hot cast iron skillet, bake in oven, work complete.
