Tonight was 96% ground beef burgers topped with cheddar cheese on multigrain thin buns with ketsup, Gulden's mustard, Smart Balance mayo, red onion, dill pickles, tomatoes and homegrown lettuce for toppings.

I can't wait until my beefsteak tomatoes and red onions can be harvested so they can replace the storebought!

So I'll contribute to this thread because I'm proud of my fairly easy dinner.

I used a taco mix, specifically the garden of eatin' blue corn tortilla one, and made ground turkey tacos. But instead of filling with the typical lettuce and tomato, I made tequila mango salsa and fresh guacamole with a distinct cumin flavor and made two types of tacos. One had the mango salsa, ground turkey, and arugula. The other had the guacamole, arugula, ground turkey, and mexican cheese mix on top. With my Seis de Mayo celebration, I had a Corona to top it off. Dinner was good. I can't wait for the leftovers.

I had what I've been told are "potato skins". I had never heard of them before but I must say I loved them.

Bake some potato's, cut them in half, scoop out some of the potato's. Bake again to harden slightly, more of a crisp then anything. Pour in grated cheddar cheese, real bits of bacon, and some chopped green onion. Back in the oven to melt the mixture a bit and then served to be dipped in salsa & sour cream. Nummy.

Thai Iced Tea, yum

Thai Palace Wontons (pork) with a cucumber chili salad. The kicker is that while the wontons were very good, the cucumber salad, almost mentioned as an aside in the description had a kickass chili sauce that made the wontons even better.

Steamed Rice - very competent, done just right.

Pad Thai Noodles - Yummy, well the whole meal was. Noodles with shrimp and a great sauce, shredded cabbage, orange and lime slices, wow.

Red Curry Chicken - best sauce of the evening, the chicken noodles and bell peppers were wonderful.

Ginger Beef - onions, bell pepers, morels, subtle but very pleasant ginger sauce. We both liked it, a lot, and agreed that while it it was the weakest of all the dishes, it was still wonderful.

Stick Rice with Mango - If you have never had this at a Thai restaurant, do it next time. Delicious.

half double smoked bacon + meat balls, the other half garlic prawn + char grilled veges + baby spinich pizza. Been a year since I've had pizza and it was good ^-^

Last night I made a mixed green salad (typical spring mix blend) with Fairway ham, Cypress Grove lamb chopper cheese, a hard-boiled egg, dates, mushrooms, and Fairway Spanish olive oil. Only one word to describe it, yum. I can't wait to enjoy the leftover salad for lunch in a little bit.

Blue cheese on my wings, please! It was the original, and I think it's the best. I also can;t understand why so many things get drenched in ranch. Why eat them at all if you you make it all taste the same?

Sunday night I grilled Hamburgers, hotdogs, cheese brats and steak. I used a simple garlic salt and taragon on the steak.

I am looking forward to getting a new grill and I may give planking a try...

Monday night was Chicago style hot dogs with a side of baked beans

Tonight hubby grilled some lemon herb chicken breasts and served them with a couple of salads from the deli.

Tonight I did cedar planked salmon with a nice garden salad followed by cake (complete with candles) and ice cream for dessert for hubby's 61st birthday!(today he is an official member of the Old Farts Club! He's been an apprentice Old Fart since I met him 29 years ago this upcoming Halloween! :P )

I had leftover filet mignon, cut into slices on a bias, over a bed of arugula with small mixed heirloom tomatoes, Cypress grove lamb chopper cheese grated over it and Spanish olive oil and red wine vinegar drizzled on with some salt and pepper. Again, simple, but yummy.
