Anyone have a good way of preparing them at home? I've watching enough shows to get an idea on how I think it would turn out well but I'm not sure.

Mostly from what I've seen is to get you a bunch of wings, cook them either by frying or baking, then dump them in a big freezer bag with the sauce and give it a few good shakes.

I love wings, the hotter the better.

Separating them takes a good knife and a little practice, but that's pretty much it. Wings are one food that's awesome without a whole lot of fancy preparation. Plus you can easily have a few different sauces if you're preparing food for a family with varying preferences.

I prefer em on the grill, put a little oil on there first so they don't stick. As long as you don't undercook them and give everyone salmonella, or burn them to a nuclear crisp, there's not much of a way to mess it up.

For super hot wings:

Franks Red Hot
Habanero extract
crushed red pepper
cracked peppercorn
honey
butter

I will generally bake off my wings before either grilling of frying. This is so you can get your seasonings to adhere to the chicken, and not stick to the grill, or wash off in the fry oil. I usually toss the wings in coking oil (of your preference) and then season lightly with salt, pepper, and Old Bay seasoning; then mix well by hand. Remember, after this stage when you begin frying or grilling that the wings are already cook, and you are only doing this second stage to grill mark and flavor, or fry to exterior crispiness, the wings. Don't over do it.

The sauce is easy. Pour enough Franks into a saute pan to coat your wings thoroughly. SLOWLY add habanero extract to desired heat, add cracked peppercorn and crushed red pepper. Bring to a low heat and slowly work in butter and honey, not melting the butter but blanc it in, so it doesn't separate from the Franks, but instead serves to cream it a little bit. The honey will emulsify the mixture, but don't bring it to a boil or the sugar in the honey will begin to caramelize and your sauce will separate.

Taste.

If the flavor is where you want it, toss it with your wings. If not, play around until you find your happy place.

EDIT: Do not, I repeat DO NOT, breath in over the sauce while heating it. You will choke. Painfully. For a long *** time.

I grill the wings, then blend a few tablespoons of melted butter and a few tablespoons of extra virgin olive oil in a large bowl and add Crystal Louisiana Hot Sauce until I get the heat I want, toss in the wings and stir to coat.

My suggestion is for about a gallon of Frank's. Adjust accordingly.

Also, being Southern and preferring our wings nekkid ...

Fry until the skin in crunchy (not crispy) in peanut oil, drain for 90 seconds then toss directly in sauce ... Don't bag shake it. Don't drizzle ... just dump the damn wings in a big *** bowl of the stuff, stir em around, and fish em out while still hot.
