But I make it with london broil meat, add 3 different color bell peppers, and will probably experiment with adding some hotter peppers in the near future. Thicken with Masa, and double the tomatoes that the box calls for and chunk in some onions too. Top with a blend of sharp cheddar and monterey jack, and a dollop of sour cream.

I prefer to make my own stocks and broths, but I always have a few storebought boxes in the pantry for those days when I don't have the time to make my own. Just heat the stock in a saucepan, add whatever vegies and meats you have on hand, throw in some herbs and spices and simmer until the vegies are tender. Serve with a crusty loaf of bread and you have a delicious supper on a cold rainy night.

Don't forget bean soups....(giving basic ingredients, always season to taste and add what you like)

Bean with Bacon is very tasty...white beans, bacon, carrots, celery, onions, garlic...

Red Beans and Rice...red beans, andouille sausage, onions, garlic, celery, bell peppers...served over rice...

Tomorrow I'm making pinto beans with smoked ham hocks, onions, garlic, bay leaf, thyme in the slow cooker...served with hot out of the oven corn bread and butter.

A slow cooker is a godsend for these types of fall/winter dishes. Throw the ingredients into the slow cooker first thing in the morning, and serve up a hot meal when everyone is home and ready to eat in the evening! Just add some kind of bread to sop up the delicious juices and a side salad!

Maybe time to buy some yeast and start making some homemade bread/rolls.
I love my crockpot...it hasn't seen much use since last year since its so hot down here. I plan on using it a lot this winter...its makes nice smells during cold weather!!
