Well, since you're expecting failure and disappointment, that's to be expected. However, let's go through some of your assumptions based on incomplete information ...
I had thought it was going to be just more of the same, but really all I've been reading from most people is how much they like a lot of the changes and new things (except healers... they almost universally don't like the change there from what I've seen). I wasn't even going to play it at all until I'd seen all these positive reviews, but why not give it a chance if so many people are liking it?

You mean the two instances tuned to Level 78 players: Throne of Tides and Blackrock Caverns?
I died for the first time in an instance today. I haven't looked at a single strat nor asked for a heads up in any instance so far. The earth elemental guy in stonecore is the first boss to kill me, I didn't expect the 50k stomp. This is what I mean by easy.

Questing isn't supposed to be difficult. It's supposed to be fun. The fact that you think dying only once in a solo environment tuned to people with all manner of gear compositions and of disparate game experiences indicates you're not placing a realistic expectation on the developers.
I'm quite happy with some quests being easily doable. Heck, even most quests being easily doable would be fine. I didn't find a single non-soloable quest in Vashj'ir, and have yet to find one in Hyjal (about 70/115 now). I haven't found a single quest that isn't just something you blow through without a care in the world. Again, this is what I mean by too easy.

It's three zones: Kelp'thar Forrest, Shimmering Expanse, and Abyssal Depths. You're giving a cookie crumb that sends you to Deepholm at Voldrin's Hold. If you have 0 rest experience, do every possible quest up until this point, you will be exactly 82 when you set foot in Deepholm the first time, thereby giving you a maximized experience pathway. Deepholm will provide you a cookie crumb for Uldum at 83. Uldum will provide you a cookie crumb for Twilight Highlands at 85. The zone progression is very deliberate and very user friendly for even the casual player.
I'm not complaining about the progression, it's quite well done. As long as you're not completely retarded you know exactly where to go and what to do next. I'm constantly surprised by people asking in general about where they're supposed to go next, because they've made this very easy to follow. On that, I have no complaints, but then I never have that I can recall. I do remember in vanilla it was hard to figure out where to go sometimes though. And for the record, I was about 50% through 82 when I finished Vashj'ir, and hit 83 at about 40/115 in Hyjal. Did BRC twice in that time, but realized that solo questing was better xp, so I didn't keep queuing after that.

Maybe you should read the quests in Hyjal, because it's by far one of the better zones ever implemented. It's also very progressive in its design, which keeps the pace moving. It is, amusingly, also faster than Vash'jir as far as experience return at appropriate level. And, there's plenty of battle going on if you pay attention as you're constantly phasing parts of the zone for new content and dealing with things.
Admittedly, I don't read every single quest thoroughly, but I do read most of them. I get the whole Hyjal story, and working on bringing back all the demi-gods and all that is should be cool, it just feels over dramatized I guess?

It's not a trade skill; it's a secondary skill and almost wholly a fluff skill for lore purposes. It is time consuming, and the few usable rewards reflect that: such as raid equivalent Item Level 359 BoA Items.
There's definitely some cool stuff later on, though I'm curious what rate of return on the "good stuff" will end up being. It's just really not my thing, though I'd end up maxing it out eventually if I kept playing because that's the kind of thing I do.

That's because you're not interested in proving yourself wrong. Some of the content is far more difficult than anything ever was in Wrath. After all, Heroics are actually Heroic and most randoms fail on the first boss.
I have heard that heroics are a big step up in difficulty, but from what I've been reading they're still definitely doable in a pug. I do read about the occasional failure on the first pull and such, but nowhere near as much "heroics are hard!" stuff as I was hearing from beta folks.
I wanted to give cata a try because it did sound interesting to me. I was mostly quitting due to time restraints, I have other things that are more important right now. I did think that if cata drew me in enough, that maybe I could work something out. The few days I've spent with it so far just really haven't really pulled me in though, so I guess you could say that I'm glad I won't have to worry about it now.
I won't say that I'll never come back, but for now it's just not what I'm looking for.
