You can activate one of the abilities(as long as it has the loyalty counters for it) as soon as you play it. After that though, it's just at sorcery speed.
If you can keep yourself from taking damage, then you can do the same for the PW. You block and protect it just like you would do yourself. If an opponent can't find an answer for it then they are in big trouble.
Last week LK and I were playing at the table and I had put together a life gain deck to combat the quick goblin deck I made that she loves to play with. Just about everything I did gained me life some how. I had the PW Ajani Goldmane out. His ultimate is the ability to put a token on the battlefield whose power and toughness are equal to your life total. I had a 54/54 out on the board at one point.
Anyway, it's all about strategy. Even if you concentrate on the PW to try and take it out, that's damage you aren't doing directly to your opponent. If you ignore it, then it just gets stronger.
When it comes to JtMS, I've read that people will pack the baby Jace in their decks just so they can take him out via the legendary rule.
