What did you have today? I made myself a sirloin steak with homemade redeye BBQ sauce.

It's supposed to be strip steak, but money's a tad tight right now, and sirloin is cheaper. Sadly, the family isn't here yet so I only had it for myself, but this recipe should make enough for 4 good-size steaks.

Steak:
3 Tablespoons vegetable oil
1 Tablespoon worcestershire sauce
1 Tablespoon read wine vinegar
1 tablespoon ground black pepper
2 teaspoons salt

Mix these together in a small bowl and coat/rub the steaks

Sauce
1/2 Cup Ketchup
1/2 Cup Beef Stock
1/4 Cup Strong-brewed Coffee
1 Tablespoon Worcestershire Sauce
1 Teaspoon molasses
1/2 teaspoon chile powder
1/2 teaspoon granualted onion or onion salt
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Bring to a boil, then simmer over low heat. Stir FREQUENTLY! If you don't, you will not like the state of your pan later.

Also made some avocado salsa. I sometimes also use this as a topping for steaks, but today it was just dip for tortilla chips. This recipe is also easily doubled for larger groups. Even if you use it on steaks, there's generally enough left over for a small bowl of chips.

2 ripe avocados
1 cup finely diced tomato
4 scallions, finely chopped (or 1/4 of an onion)
2 tablespoons lime juice
2 tablespoons chopped basil
1 tablespoon extra virgin olive oil
1 tablespoon minced garlic
1 teaspoon minced jalapeno chile pepper (sometimes I leave this out, just because I end up wasting the rest of the jalapeno)
3/4 tablespoon salt
1/4 tablespoon black pepper
1/4 tablespoon worcestershire sauce

I like to make this early, refrigerate it, and then get it out an hour or two before it's needed.

1 ea Hamburger Bun Set ( your preference )
Pickles, lettuce, tomatoes, red onion, mayo, ketchup, yellow mustard as desired.

repeat as often as desired

1 ea Jumbo Kosher hot dog (or brat/sausage/dog of your choice)
1 ea hot dog bun set
ketchup, yellow mustard, onions as desired

repeat as often as desired

Misc assortment of condiments and snacks of your choice, inlcuding potatoe salad, chips, baked beans, melon (cantaloupe, honeydew, or water, your choice).

repeat as often as desired..

Well, I realize it's a bit late, but these came out to be the best ribs I've ever eaten. My wife got the recipe from her dad. We had two large pressure cookers going and made three racks of ribs (along with a ton of other food).

Ingredients:
1 rack spare ribs
2 bottles of beer
2 cubes chicken boullion
1 large onion
1 bottle of your favorite barbeque sauce

Requires:
Grill
Pressure Cooker

Directions:
Get a large pressure cooker.
Separate the ribs to fit in pressure cooker.
Quarter the onion, toss it in.
Pour in beers.
Add water if necessary, the pressure cooker should be about half full of liquid after the ribs are in.
Add chicken boullion.
Seal pressure cooker and get it going.
Once the pressure cooker starts actually cooking, cook the ribs for 25 minutes.
In the mean time, clean and prepare a grill.
Set the grill as hot as you can get it.
Remove ribs from pressure cooker, carefully, they are going to be really tender.
Wipe down the grilling surface thoroughly with vegetable oil.
Set the ribs on the grill.
Brush the ribs with BBQ sauce. (As previously and emphatically stated, Sonny's is the best :))
Cook them at a really high temperature for 2-3 minutes on each side, brushing with BBQ sauce again after flipping. (Just enough to sear the outside)
Eat.

All of these are way too hard for me...too many steps... I bet they taste yummy though!

My 4th of July eating involved a grilled chicken salad from McD's. I had to work :)
